Creamy vegan roasted pumpkin soup with sweet potato, coconut milk and ginger—cosy, nourishing and perfect for a cold day.


Ingredients

700g pumpkin or butternut squash, peeled, deseeded and cut into 3cm chunks 500g sweet potato, peeled and cut into 3cm chunks 1 medium brown onion, sliced 1 eating apple (e.g. Braeburn), cored and chopped 3 garlic cloves, peeled 2cm piece fresh ginger, peeled and finely grated 1 tsp ground coriander 1/4-1/2 tsp mild chilli flakes (optional) 1 tbsp olive oil (or 2 tbsp water for oil-free) 750ml hot vegetable stock (from a vegan stock cube/pot) 200ml coconut milk (from a tin; shake well) 1 tsp white miso paste (optional but lovely) 1-2 tsp fresh lime juice (to taste) Sea salt & black pepper To serve (optional) Toasted pumpkin seeds, chopped fresh coriander or chives, swirl of coconut milk, crusty bread

Instructions

Heat oven to 200°C (fan 180°C). On a large tray, toss pumpkin, sweet potato, onion, apple and garlic with olive oil (or water), coriander, chilli flakes (if using), a big pinch of salt and pepper. Roast 25–30 minutes, turning once, until the edges are lightly caramelised and the veg are tender.

Tip the roasted veg into a large saucepan. Add ginger and the hot stock. Bring to a gentle simmer for 5 minutes. Stir in coconut milk and miso, then remove from the heat.

Using a stick blender, blend until silky smooth (or blend in batches in a jug blender, venting the lid). Add a splash more hot water if you prefer it thinner.

Stir in lime juice, taste and adjust seasoning with salt and pepper. Ladle into bowls, add toppings and serve.

Notes

Type of pumpkin:Any type of pumpkin will work; I love red kuri/hibkokaido pumpkin for speed (thin skin) and butternut squash for sweetness.

Oil-free: Replace the oil with water during roasting; you’ll still get a lovely roast pumpkin flavour.

Tip: If you love extra richness, finish with a swirl of coconut cream. For a little heat, add cayenne pepper before blending.
