Description

Set-and-forget Lentil Soup (Crockpot Recipe) for cosy nights; vegan, hearty, and freezer-friendly.

Ingredients

Scale

3 tablespoon olive oil

2 large onions , finely sliced

2 teaspoon ground cumin

1 teaspoon chilli flakes

1/2 teaspoon ground black pepper

250 g red lentils

25 g fresh basil

1 teaspoon fresh thyme leaves

1 teaspoon fresh oregano leaves

1 litre vegetable broth

800 g canned chopped tomatoes (2 x 400g / 14oz cans)

2 tablespoon tomato purée (tomato paste)

1 tablespoon sugar

250 ml plant milk (your favourite plant milk)

Instructions

Add everything to the slow cooker insert, stir, pop the lid on and cook for 6 hours on high. That’s it. Taste, adjust seasoning, and ladle into an individual bowl with chopped basil.

Notes

Prefer brown or French green lentils? They keep their shape more than red lentils; just extend the cooking time if they’re still a touch firm.
