Description

If you thought that by being vegan you were going to miss out on chocolate chip cookies you'd be wrong - these vegan chocolate chip and oat cookies are chewy and delicious and pack an extra protein punch because of the added oats.


Ingredients

Units Scale
  • 1/2 cup dairy free butter (I use Flora Plant Block)
  • 1/2 cup soft brown sugar
  • 1/2 cup caster sugar
  • 1 cup plain flour
  • 1 1/4 cups oats
  • 1 tbsp ground flaxseed
  • 3 tbsp warm water
  • 1/2 tsp baking powder
  • 1/2 tsp bicarbonate soda
  • 100 g dairy free chocolate chips
  • 1 tsp vanilla extract

Instructions

  1. Pre heat the oven to 180 degrees celsius and line a baking tray with baking paper
  2. Combine the ground flaxseed and water in a small bowl and leave for a few minutes to form a flax egg.
  3. Cream the dairy free butter and sugars together until smooth
  4. Add the flax egg and vanilla extract and beat to combine
  5. In a separate bowl combine all the dry ingredients and add to the sugar and egg mixture.
  6. Mix in the chocolate chips
  7. Roll into 2 cm balls and place 5cm apart on your lined baking tray
  8. Cook for 10 minutes
  9. Leave to cool on the tray for a couple of minutes before transferring to a wire rack to cool completely.
