  1. In a bowl, combine the oat flour, sea salt, and baking powder. Mix well to evenly distribute the ingredients.
  2. Add the oat milk, maple syrup, and vanilla extract to the dry ingredients. Stir gently until everything is combined. Allow the batter to sit for about 5 minutes to thicken slightly.
  3. If the batter becomes too thick after resting, add a little more oat milk, one tablespoon at a time, until you achieve a pourable consistency.
  4. Heat a frying pan or griddle on medium heat and lightly grease with coconut oil.
  5. Spoon the pancake mixture onto the pan, forming small circles. Cook until bubbles appear on the surface, then flip carefully and cook the other side until golden brown.
