- 180g oat flour
- 1/2 tsp sea salt
- 2 1/2 tsp baking powder
- 50ml oat milk (plus extra if needed)
- 60ml maple syrup
- 1 tbsp vanilla extract
- Coconut oil (to grease the pan)
Instructions
- In a bowl, combine the oat flour, sea salt, and baking powder. Mix well to evenly distribute the ingredients.
- Add the oat milk, maple syrup, and vanilla extract to the dry ingredients. Stir gently until everything is combined. Allow the batter to sit for about 5 minutes to thicken slightly.
- If the batter becomes too thick after resting, add a little more oat milk, one tablespoon at a time, until you achieve a pourable consistency.
- Heat a frying pan or griddle on medium heat and lightly grease with coconut oil.
- Spoon the pancake mixture onto the pan, forming small circles. Cook until bubbles appear on the surface, then flip carefully and cook the other side until golden brown.
- Serve warm, drizzled with extra maple syrup, fresh fruit, or your favourite toppings!
