Description
Jammy dodgers are a classic British biscuit. They are fun to make and are the perfect Valentine's biscuit. Here is a great recipe for a vegan version - homemade vegan jammy dodgers.

- 200 g dairy free butter
- 1 teaspoon vanilla extract
- 100 g caster sugar
- 300 g plain flour
- 4 Tablespoons icing sugar (to dust (optional))
- 8 Tablespoons strawberry jam
Instructions
- Pre heat the oven to 160° celcius / 140° for a fan oven.
- Cream together the butter, sugar and vanilla extract by beating with a wooden spoon or using a mixer for a couple of minutes.
- Sieve the flour and mix into the butter mixture until a dough is formed. It should just come together. If it doesn't you can add a tiny bit of water.
- Wrap in cling film or put into an airtight container and leave in the fridge for at least 30 minutes.
- Flour your work surface and roll the dough into a 4-5mm thickness.
- Use cookie cutters to cut the bottom of the biscuit shapes. You can use any shape you like.
- Use the same cutter to cut the top of the biscuit shapes, and a smaller cutter to cut holes in the middle.
- Place on greaseproof paper on a baking sheet and put into the oven for 12-15 minutes. The length of time they take to cook depends upon how big and thick they are so I would recommend checking them often. You want to take them out before they start to brown.
- Leave to cool on a wire rack.
- When completely cool, spread a layer of jam on the bottom biscuit and sandwich together with a top biscuit.
- Dust with icing sugar to serve (optional)
