Ingredients
70g almond butter
1 tbsp coconut oil
100g soft brown sugar
115g plain flour
1 tsp baking powder
50ml oat milk
50g chopped almonds
Instructions
Step 1: Preheat
Set your oven to 190°C (375°F). This ensures it’s at the right temperature when you’re ready to bake.
Step 2: Chop the almonds
Using a sharp knife, chop the almonds into small pieces. Set aside.
Step 3: Combine the dry ingredients
In a large bowl, mix together your flour, baking powder, and sugar until well combined.
Step 4: Add the wet ingredients
Pour in the wet ingredients (such as almond butter, oat milk, and coconut oil) and stir until the dough starts to come together.
Step 5: Add almonds and chocolate chips
Stir in the chopped almonds and dark chocolate chips. You can use your hands to help the mixture come together into a soft dough.
Step 6: Shape the cookies
Divide the dough into 9 equal balls and place them on a lined baking sheet, spacing them slightly apart.
Step 7: Bake
Bake in the preheated oven for 10 minutes. Keep an eye on them—once the cookies look lightly golden, they’re ready to come out.
Step 8: Cool briefly on the baking sheet
Remove the baking sheet from the oven and let the cookies sit for a few minutes to firm up.
Step 9: Transfer to a rack
Carefully move the cookies to a wire rack and allow them to cool completely before serving or storing. Enjoy!
