Ingredients

  • 150 g plain flour
  • 50 g vanilla pea protein powder
  • 1 tsp baking powder
  • pinch sea salt
  • 1/2 tsp bicarbonate soda
  • 110 g coconut oil (melted)
  • 2 tbsp ground flaxseed
  • 110 g muscavado sugar
  • 50 g icing sugar
  • 2 tsp vanilla extract
  • 50 g pecans
  • 120 g vegan chocolate chips

Instructions

Preheat the oven to 200 degrees celsius (180 for a fan oven) Gas Mark 6

 

Line two baking trays with silicone baking liners or parchment paper.

 

Put the flaxseed in a small bowl and add 5 tbsp water. Stir and leave to soak for 5 minutes.

 

Toast the pecan nuts for a couple of minutes in a dry pan. Shake / mix constantly so they don't burn. Leave to cool and chop to the desired size.

 

Melt the coconut oil and add the vanilla extract, both sugars, and flaxseed in a small saucepan or the microwave. Mix with an electric whisk until nice and creamy.

 

Mix the flour, sea salt, protein powder, baking powder, bicarbonate of soda, nuts and chocolate chips together in a large bowl.

 

Add the wet ingredients to the dry ingredients and stir enough to combine.

 

Put tablespoon sized balls of protein cookie dough onto the prepared baking sheet or cookie sheet, separated a little as they will spread when they cook.

 

Bake for 10-12 minutes in the preheated oven or until starting to turn golden brown.

 

Cool on a wire cooling rack and enjoy!
