I do love a good cookie and these vegan chocolate chip protein cookies are really very tasty, and they have the added bonus of packing a little protein punch, with over 2g of protein per cookie. Whilst I don't believe that vegans are prone to protein deficiencies, I do like to keep an eye on my protein consumption with a bi-weekly protein smoothie and these cookies are an easy way to up my quota too.
These are really popular with my children too, I just make sure that the pecans are chopped up small if I am making them for the children to eat.

I use pea protein powder because my youngest has a soya intolerance but you could use the protein powder of your choice in these. I find that the vanilla flavour works really well in these but you could of course try chocolate for a chocolatier cookie.
Ingredients
- plain flour (all purpose flour)
- vanilla pea protein powder
- baking powder
- bicarbonate soda
- coconut oil
- ground flaxseed
- muscavado sugar
- sea salt
- icing sugar
- vanilla extract
- pecans
- dairy free chocolate chips or chocolate chunks

Instructions
- Preheat the oven to 200 degrees celsius (180 for a fan oven) Gas Mark 6
- Line two baking trays with silicone baking liners or parchment paper.
- Put the flaxseed in a small bowl and add 5 tablespoon water. Stir and leave to soak for 5 minutes.
- Toast the pecan nuts for a couple of minutes in a dry pan. Shake / mix constantly so they don't burn. Leave to cool and chop to the desired size.
- Melt the coconut oil and add the vanilla extract, both sugars, and flaxseed in a small saucepan or the microwave. Mix with an electric whisk until nice and creamy.
- Mix the flour, sea salt, protein powder, baking powder, bicarbonate of soda, nuts and chocolate chips together in a large bowl.
- Add the wet ingredients to the dry ingredients and stir enough to combine.
- Put tablespoon sized balls of protein cookie dough onto the prepared baking sheet or cookie sheet, separated a little as they will spread when they cook.
- Bake for 10-12 minutes in the preheated oven or until starting to turn golden brown.
- Cool on a wire cooling rack and enjoy!
Top tip: One tip I would have is to make these using a silicone baking sheet to line your metal baking tray. I bought one from Ikea and it has been one of my best purchases but I've linked to one on Amazon that looks really good and has good reviews. I've been trying to cut down on waste and this saves me using baking parchment to line my baking sheets.

Substitutions and Variations
If you need nut free high protein cookies you can leave out the pecans. Make sure that the protein powder you use is nut free too.
You can swap out the chocolate chips for something else. Here are some ideas...
