As a vegan raising vegetarian children I am always looking to make sure that we are getting enough protein and goodness in our diet. These chickpea cookies are really easy to make too, all you need is a food processor and you blend all the ingredients together (except the chocolate chips which you stir in at the end). Then just spoon the mixture onto a lined baking tray and bake for 25 minutes. It is quite a loose mixture but just trust the process, shape it into cookie shapes and they will bake up firm.

- Pre heat the oven to 180°C
- Put all of the ingredients into a food processor and blitz for 2-3 minutes until really smooth
- Stir through the chocolate chips. The mixture will be quite loose.
- Line a cookie sheet with parchment paper or a silicone liner
- Dollop the mixture into 9 cookie shaped rounds, smoothing into shape with a spoon.
- Bake for 25 minutes or until starting to turn brown.
- Leave to cool on the tray for 2 minutes before transferring to a wire cooling rack to cool.
