This broccoli vegan soup is really quick and easy to make so it is perfect for a healthy lunchtime meal. It has a delicious, rich flavour and it full of goodness too. Make a big batch and freeze portions for lunches the next week too.
I absolutely love making soup. It's the perfect lunchtime meal and I find it's a really great way of getting vegetables into my diet (and my children too). Particularly in the winter, there is little better than a warm soup with crusty bread. I'm also a busy working mum of four children and this is a great meal to make in batches and freeze for when you don't have much time. Just defrost a portion from the freezer and you have a healthy, homemade meal with little fuss.
So, let me show you how easy it is to make this tasty broccoli vegan soup!

Broccoli Soup Ingredients
The base of this 6 ingredient recipe is obviously the broccoli. I used regular broccoli and don't forget to use the whole thing, all the broccoli florets and broccoli stems included! There is literally no reason not to eat the stalks on broccoli, it is just as tasty and nutritious and it makes sense to not waste anything.
Broccoli is often referred to as a superfood and it's not difficult to see why. It is low in fat and calories, high in fibre and protein and full of vitamins. It is a great source of Vitamin C and Vitamin K as well as Vitamin A, manganese, potassium and B vitamins.
I have added nutritional yeast to this recipe because it adds a delicious slightly cheesy flavour that goes so well with broccoli giving you classic broccoli cheese soup recipe vibes. It is also a great addition to vegan recipes where you can because it is a complete protein and is also high in lots of different vitamins and minerals, especially B12.
You can use a homemade veggie broth or use vegan stock cubes or bullion powder. I use stock cubes for ease.
You will need:
- Broccoli
- White onions
- Garlic
- Vegetable stock
- Olive Oil
- Nutritional yeast
- Salt and black pepper

Equipment
This soup is best made in a Vitamix blender as the Vitamix container can blend hot soup due to the lid design that ensures the heavy steam escapes. If you are using another type of blender wait until the soup is cool before you blend.
Instructions
- Heat the olive oil in a large pot or saucepan
- Add the chopped onion and sauté on a medium heat for 5 minutes until translucent
- Add the minced garlic and cook for another minute
- Chop the broccoli, stalks and all, and put 700g of it into the saucepan. If you want a smooth soup, go ahead and put all the broccoli in at this stage and skip the part at the end where you add the chopped broccoli.
- Pour in the vegetable broth and simmer, covered for 15 minutes or until the broccoli is soft.
- Blend until smooth using a Vitamix blender or other suitable blender on it's highest speed setting. Add an extra half a cup of water if you want a thinner consistency.
- Return to the heat and stir through the remaining 100g of broccoli and the nutritional yeast.
- Cook for 10 minutes or until the broccoli is soft.
- Add salt and pepper to taste and serve.

It wouldn't need a seriously long time in there as it would be ready when the broccoli is soft so it might be something to set up in the morning and it would be ready for lunch. I think it would also work well cooked in an Instant Pot.
What blender do I need?
You will need a Vitamix blender or similar to blitz the soup smooth. Or you could also use a stick blender or food processor. Make sure if you are using a food processor or blender like a Nutribullet or NutriNinja that you wait until the soup is cool to blend. I like to keep some broccoli over until the end to add some texture back into the soup but you can blend it all in together if you like.
