Being in lockdown has meant that some essentials are difficult to get, bread being one of them. This recipe for no rise slow cooker bread will give you delicious fresh bread in just over 2 hours without going to a shop - you can't beat that!
Why make slow cooker bread?
I used to have a bread maker which was brilliant but it broke a while ago and you couldn't buy them for love nor money at the start of lockdown. As a big family we get through a lot of bread, and two of us need to eat soya free bread so it made sense to make bread fresh each day. Homeschooling 3 children, entertaining a baby and trying to work from home doesn't give me much time to spend kneading and letting dough rise so this really quick slow cooker bread is really minimal effort and a great quick bread recipe which is just what I need! Honestly, this recipe is a great way to get a loaf of homemade bread on the table, quickly and with minimum effort.
The only disadvantage of this bread is that it isn't the most gorgeous loaf due to the odd lines you will get on the sides from where the baking paper has been. You will get a better looking loaf using a bread pan but it tastes really good so I'm not too bothered about looks with this one! So if delicious slow cooker bread is your thing, here is how to make it.

Ingredients for crock pot bread
You will need...
- plain white flour / all purpose flour
- fast action / instant yeast
- salt
- sugar
- lukewarm water
See the crock pot bread recipe card below for exact quantities.

Instructions
- Line the slow cooker with baking paper or parchment paper.
- Preheat the slow cooker - turn the slow cooker on high to preheat.
- Add the warm water, sugar and yeast into a large bowl. Mix with a wooden spoon and leave to activate for about 5 minutes.
- Add the flour and salt and mix well until a dough forms.
- If the dough is too sticky add more flour, if it is too dry add a little more water.
- Knead the dough for a couple of minutes until it is smooth and shape into an oval on a lightly floured surface.
- Place the bread dough in the slow cooker, put the lid on the top of the crockpot and cook for two hours on high. There is no need to including rising time or to let the mixture rest.
- Remove from the slow cooker and place the whole loaf on a baking tray lined with a baking sheet.
- Put the bread into the oven at 200 degrees celsius to brown the top of the loaf. Bake for about 10-15 minutes until brown all over.
- The bread is cooked when it sounds hollow when you knock on the bottom of the loaf.
- Leave to cool on a wire rack.
Top tip - If this is your first time making bread make sure that the water is warm but not hot. It needs to be warm to help to activate the yeast, but too warm and it will kill the yeast, meaning that your bread won't rise.

Substitutions and Variations
You can't really vary this slow cooker bread recipe much or it won't work. You could add a little olive oil (a tablespoon) to add some flavour and healthy fat to the recipe or experiment with adding seeds to the dough when you are making it. You can also experiment with using gluten free flour to make gluten-free bread or whole wheat flour to make a whole wheat bread- if you try one of these variations let me know in the comments below. I'm going to try wholemeal flour next time.

FAQs
Do I need a special slow cooker for making bread?
No, you don't necessarily need a special slow cooker for this homemade bread recipe. Most standard slow cookers can be used for baking bread successfully. However, there are a few factors to consider:
Size and shape: Choose a slow cooker that is an appropriate size and shape for baking bread. A round or oval-shaped cooker is preferable as it allows the bread to take on a more traditional shape and promotes even heat distribution.
Temperature control: Ensure that your slow cooker has temperature control options, typically low and high settings. This will give you more control over the baking process and allow you to adjust the heat as needed.
Removable insert: It can be helpful if the slow cooker has a removable insert or baking vessel. This makes it easier to handle the bread and facilitates the removal of the baked loaf without damaging its shape.
While a standard slow cooker can work well for bread baking, some manufacturers also offer specialized slow cookers with baking-specific features. These models may have additional settings, such as a dedicated "bake" function or more precise temperature control. However, they are not essential and are more of a convenience factor.
Ultimately, with the right size, shape, and temperature control options, you can successfully bake bread in a regular slow cooker without the need for a specialized one.
What flour to use for slow cooker bread?
One of the best things about this slow cooker version of bread is the fact that you don't need to use bread flour, just regular white u003cspan data-tasty-link-href=u0022https://www.amazon.co.uk/Marriages-Finest-Plain-Flour-1-5kg/dp/B01IPKK1IC?crid=2YQTOIWWL9EE7u0026amp;keywords=plain+flouru0026amp;qid=1643926924u0026amp;sprefix=plain+flour%2Cspecialty-aps%2C183u0026amp;sr=8-4u0026amp;linkCode=li2u0026amp;tag=cookandcwtc-21u0026amp;linkId=5264b7b658ce4df939c7b9a664af1805u0026amp;language=en_GBu0026amp;ref_=as_li_ss_ilu0022 class=u0022tasty-linku0022u003eplain flouru003c/spanu003e will do. Do you have to knead slow cooker bread?
The short answer is not really. I use a stand mixer with a dough hook to bring my dough together and only knead it for a minute or two.
Can I use my regular bread recipe in a slow cooker?
Yes, you can adapt your regular bread recipe to be baked in a slow cooker. However, it may require some adjustments to account for the different cooking environment. Here are a few tips to help you convert your regular bread recipe for slow cooker baking:
Consider the dough hydration: Slow cooker baking tends to retain more moisture than oven baking. As a result, it's recommended to slightly reduce the amount of liquid in your bread recipe. Start by reducing the liquid by about 10-20% and observe the dough's consistency. Adjust as needed to achieve the desired texture.
Increase the yeast quantity: Since slow cooker baking takes longer than conventional oven baking, it's helpful to increase the amount of yeast slightly. This will help ensure proper rising and fermentation of the dough during the extended cooking time.
Adjust the baking time: Slow cooker baking is gentler and takes longer than traditional oven baking. The exact cooking time will vary depending on your slow cooker, so it's important to monitor the bread as it bakes. Start with the recommended cooking time in your recipe and check for doneness. If needed, you can add additional time in increments until the bread is fully baked.
How long does slow cooker bread keep for?
Like all soft homemade bread, this is best when eaten the day that it is made. However if you keep it in an airtight container at room temperature or a cool place it will keep for up to 3 days. As it gets older you can still use it for toast.
Can you freeze slow cooker bread?
Yes you can. Much like regular bread this can be frozen very easily. I prefer to cut it into slices and wrap the individual slices in plastic wrap before freezing. When you would like some toast, simply put the frozen slice into the toaster and cook from frozen.
I never can resist a slice of this crock pot bread all warm with vegan spread and jam and that's the first thing I do when I make this bread! Warm, delicious bread smothered with jam is the best part of the morning.
