I think that rice pudding is the ultimate comfort food. Warming, filling and sweet - I love nothing more than sitting down on the sofa with a nice big bowl of hot dairy-free rice pudding and curling up with a good book to enjoy it. This slow cooker vegan rice pudding recipe is really easy to throw into the slow cooker in the afternoon and you will have a delicious vegan rice pudding ready for dessert, with minimum fuss!

I love that this recipe uses store cupboard ingredients, so at any time I probably have all the things to make this in the house. This means I can whip up a delicious and filling desert without having to pop to the shops to buy the main ingredients! This slow cooker vegan rice pudding only has 5 ingredients...

This recipe really is so easy - simply put all the ingredients into the slow cooker and stir.
Set on high for 3 hours, cover, and stir occasionally.
Add more non-dairy milk for a runnier consistency, or cook for longer to make a thicker rice pudding.
My traditional method of making rice pudding was a bit more labour intensive than my current time poor situation would allow so I experimented one day with a slow cooker version and I was so happy with the result! The rice pudding only needs a short time in the slow cooker on high and don't be tempted to leave it any longer or it might go mushy. You could put it on when you get home from work so you can enjoy it later that evening, or if you are like me and you work from home (and I know that so many of us are working from home at the moment) you can just nip down to the kitchen and set it up in the slow cooker 3 hours before you want to eat it.

- 60 g caster sugar
- ½ tsp ground nutmeg
- 400 g tinned coconut milk
- 750 ml coconut milk (from a carton)

Equipment
You will need a slow cooker to make this delicious dessert. You can either use a standalone slow cooker or a multi-function device such as the Ninja Foodie. Both will work well. You can also make this in the oven if you use an ovenproof casserole dish and cook at 200 degrees celsius for an hour - keeping an eye on it to make sure that it doesn't boil over. Substitutions and variations
I love the coconut flavour that using coconut in this recipe gives it but if you prefer a more traditional, creamy rice pudding you could try soy milk or oat milk or for a more nutty flavour try almond milk or hazelnut milk. Just bear in mind that different milks might cause the rice pudding to have a different consistency, for example cashew milk will give a lovely creamy texture.
If you prefer a more natural sweetener try swapping the white sugar for maple syrup or agave syrup, just reduce the coconut milk volume slightly to compensate for the extra liquid. Or conversely if you prefer a sweeter, more caramel taste to your rice pudding swap out the caster sugar for brown sugar or coconut sugar.
If you aren't a fan of nutmeg, try adding vanilla extract instead or add cinnamon sticks or ground cinnamon while it is cooking to add a cinnamon flavour. Or you could freshen it up with a squeeze of lemon juice and some lemon zest or orange zest. If you are a chocolate lover why not stir through some chocolate chips?

How do I store rice pudding?
Leave the leftover rice pudding to cool completely to room temperature then store in an airtight container in the fridge for up to three days.
Can I reheat rice pudding?
Although technically you shouldn't re-heat rice products as there is a risk of bacteria growing, I have found that this slow cooker vegan rice pudding will keep really well in the fridge for a couple of days. When you want to re-heat it you can add a little more coconut milk and reheat it in a saucepan on the stove or in the microwave. Make sure that you cool the rice in the fridge straight after cooking if you are planning on keeping it for the next day. What type of rice to use in rice pudding?
Traditionally a short grain white rice is used for rice pudding which is what I used here. You can usually substitute arborio rice which is otherwise known as risotto rice and it will work just as well. You can use brown rice, although the texture will be different and it might need to cook for longer. Using brown rice will increase the protein and fibre content and count as a portion of wholegrain too. Long grain rice won't give the same texture as short grain rice unfortunately.
How to serve rice pudding
I love rice pudding just as it is but traditionally it is served with a blob of jam and a handful of raisins, and it is delicious topped with fresh fruit too - which is also a great way of getting some of your extra 5 a day. Try also sprinkling golden raisins on top and adding some coconut flakes too. To make a really healthy and nutritious rice pudding you can also add some chia seeds and ground flaxseeds as you are serving it.
How to make rice pudding creamy?
The trick to making rice pudding creamy is to use a milk with a higher fat content and thicker consistency. Tinned coconut milk is perfect for this but you could also add some more of the heavy cream from the top of the coconut milk and less of the watery coconut milk at the bottom of the tin. Using more coconut cream will make for the creamiest vegan rice pudding.
