With four kids, it can be tricky whipping up sweet treats that aren't too time-consuming. When I do crave something, I usually whip up this easy chocolate chia mousse. Even though it's a quick recipe, you're left with smooth, thick, rich mousse that is sure to satisfy any craving you have!
This quick chocolate chia pudding tastes best when it's cold, plus it lasts longer when kept in the fridge. Feel free to double the recipe and dole it out in individual serving dishes or keep it in a big container and serve it as desired.
This recipe is perfect for people who are not a fan of the texture of regular chia pudding. Regular pudding is not blended and the texture of the little seeds can be off-putting to some, which is why using a high-powered blender to make this mousse smooth makes it my personal favorite chocolate chia seed pudding recipe.
Ingredients for Chocolate Chia Seed Pudding
Not only is this recipe easy, but it also only requires five ingredients, so it's quick to prep as well. Maple syrup is used as a sweetener, allowing you to enjoy a refined sugar-free chocolate chia pudding. Now, when your kids ask for tapioca pudding or chocolate pudding, you can whip up this healthy alternative.

- Plant-based milk (I used oat milk)
- Cacao powder
- Pure maple syrup
- Vanilla extract

Chia seeds are the holy grail of ingredients. Yes, they have a great source of protein in them. But, they also contain many other nutrients like minerals, fatty acids and antioxidants. The health benefits of chia seeds are huge and they should be an essential inclusion in a vegan diet. Cacao powder is also an excellent source of nutrients as it offers minerals and fibre. This chocolate mousse alternative is a fantastic sweet swap while being chock full of healthy goodness and chocolate flavor.
You will find all the ingredients for this chocolate chia pudding recipe in larger grocery stores, but for many vegans they will already be store cupboard ingredients.

How to Make Chocolate Chia Pudding
This really is such a simple dessert, it is very easy to make. Place all the ingredients in a high-speed blender and blend until smooth - the time will vary slightly, though it should be about 30 seconds to 1 minute. I use my Nutri Ninja blender, though any blender will work. The mixture will thicken up straight away into a creamy consistency. For a thicker chocolate chia pudding, put it in the fridge for a few hours. Serve as-is, or top with vegan squirty cream (made from soy milk or coconut cream) and vegan sprinkles.
Variations
Add your favourite berries and cacao nibs instead of squirty cream and sprinkles to turn this dessert into a tasty breakfast or healthy snack. You can also leave the cacao powder/cocoa powder out for a vanilla mousse or add a shot of espresso for a mocha flavour. You can use unsweetened cocoa powder instead of cacao powder but you might need to use a little less, as cacao has a stronger chocolate flavour and cocoa can be sweeter. Either works really well in this delicious recipe though.
Remember, when creating variations, start with a base of blended chia seeds, cocoa powder, a liquid (milk or a milk alternative), and a sweetener. Then, incorporate your chosen variations to suit your taste preferences. Adjust the quantities to maintain the desired consistency and flavor balance.
- Fruit-infused: Add fruits like strawberries, raspberries, bananas, or cherries to the blend before mixing. You can blend the fruits along with the pudding mixture or layer them on top. Blending fruits into the pudding will give it different flavors and should add some natural sweetness.
- Nutty Delight: Incorporate nut butters like almond butter, peanut butter, or hazelnut butter into the mixture for added creaminess and flavor.
- Spiced Up: Introduce spices such as cinnamon, nutmeg, or a pinch of cayenne pepper for a more complex flavor profile.

- Sweeteners: Experiment with different sweeteners like honey, maple syrup, agave nectar, or stevia to adjust the sweetness to your preference.
- Toppings Galore: Sprinkle with your favorite toppings such as sliced almonds, chopped nuts, cocoa nibs, fresh berries, or a dollop of whipped cream for added texture and flavor.
This recipe for blended chia pudding is naturally vegan, soya, egg and dairy free so it is suitable for a wide range of people with allergies or intolerances.
Equipment
You don't need many tools to make this recipe except for a high speed blender, weighing scales, and spoons, and a rubber spatula to get the finished mousse out of the blender. The only other equipment is either a jar or container to store the extra chia pudding and a bowl for serving.
Storage for Chia Pudding
As noted, you'll want to keep any leftover mousse in the fridge in an airtight container. When refrigerated, this chia pudding should keep for about five days. Though with how good it tastes, it will most likely be gone before then!
Top Tip for Chocolate Chia Pudding
The longer you leave the chocolate chia mousse in the fridge, the thicker it will get until it fully absorbs the coconut milk, almond milk, or other non-dairy milks you include. Leave it as long as possible for the thickest consistency and creamy texture.

Instructions
1. Measure out each ingredient listed.
2. Once measured, add all ingredients to the blender and blend on high until you have a smooth pudding consistency.
3. Using a rubber scraper, transfer chia mousse to a large bowl (or container of choice).
4. Enjoy straight away or place the bowl in the refrigerator for about four hours for thicker pudding.
5. Store in a container for up to five days in the fridge or one week in the freezer.
