Made from simple ingredients, including whole cashews this raw cashew butter recipe is totally natural and contains no chemicals or preservatives - you know exactly what has gone into your own cashew butter.

The ingredients to this chocolate orange cashew butter are completely natural and it is a great alternative to processed chocolate spread. The delicious orange flavour comes from fresh orange peel - try to buy organic oranges so that the skin isn't contaminated with pesticides. There is no added sugar in this luscious spread recipe either - all the sweetness comes from the maple syrup. It contains no preservatives and no sunflower lecithin or soya lecithin either.

Instructions

In a small pan roast the cashews for 5-10 minutes
Place the roasted nuts, cocoa powder, maple syrup, salt and coconut oil into a high speed blender or food processor and blend on high. You might need to scrape down the sides of the blender a couple of times. You will start to smell the nutty chocolate aroma!

Blend until it resembles peanut butter for approximately 3-4 minutes.

Add the orange zest and mix everything together until smooth with a glossy sheen.

Transfer the chocolatey delight of cashew butter to a small glass container or mason jar. Cover and store it in the refrigerator.
Top tip: use the best blender that you can if you want the cashew butter to be smooth with a creamy texture. I'd recommend the Vitamix as a great high powered blender. However, you can of course blend it less to create a cashew butter with a crunchy texture.

50 g cocoa powder

150 g organic cashews
¼ teaspoon sea salt
½ teaspoon orange zest
1 tbsp coconut Oil

Substitutions and Variations
You can make a few modifications to this homemade cashew butter recipe if you like. You can swap the cashews for other nuts such as hazelnuts or peanuts - obviously the flavour will be completely different. If you use almonds for example you will end up with almond butter.
You can also leave out the orange zest if you prefer - or try replacing with vanilla extract or another spice such as cinnamon.
You can also vary the amount of time you spend blending the roasted cashews to achieve the desired consistency. If you are looking for a smooth cashew butter you will likely need a high powered blender and if you want a crunchy cashew butter then take care not to overblend!
If you don't have or don't like coconut oil then you could use an excellent extra virgin olive oil instead. I would steer clear of vegetable oils though.
