Spiced Butternut Squash and Sweet Potato Soup
Vegan slow cooker recipes are my favourites because they require so little effort, and this one is the perfect example. Loaded with protein, fibre, and nutrients, Moroccan Spiced Chickpea Soup is satisfying enough to keep you full without putting you in a food coma. Now that I've got your attention, let's get right down to the good stuff.

Ingredients
You will probably have most of the simple ingredients to this spiced chickpea soup recipe on hand at home. You can even use frozen sweet potato - I always have a bag of it in the freezer for whipping up soups like this without having to pop to the grocery store. The sweet potato is filling and nutritious and the chickpeas add a protein punch. Garlic is great for the immune system and I try to include it in as many of my autumn / winter recipes as I can.
- diced onion
- cloves garlic
- ground cumin
- chilli powder
- sweet potato
- carrots
- vegetable stock
- tinned chickpeas (garbanzo beans)
See recipe card for quantities.
Instructions
This delicious soup recipe couldn't really be much easier. Dice the large onion and mince the garlic. Peel and cut the carrot and sweet potato into one inch chunks. Drain and rinse the chickpeas (save the aquafaba for another recipe). Then put all the ingredients into a slow cooker and cook on high for 4-6 hours or until the vegetables are soft. Blend using a stick blender and season to taste with fresh pepper and a couple pinches of salt.

Slow Cooker Moroccan Chickpea Soup Recipe Tips
Looking to make the best Moroccan Spiced Chickpea Soup? Here are some of my top tips to help you get there:
- For a pop of colour and tons of added flavour, garnish the soup with fresh herbs such as fresh coriander, fresh cilantro or fresh parsley just before serving it.
- Lover of spicy food? Try adding a diced red chilli pepper to the soup before cooking it or sprinkling in some cayenne pepper, red pepper flakes, or mixing in some harissa paste.
- To make this dish even heartier, try adding some lentils or quinoa for some extra plant-based protein.
- Looking for that photo-worthy final look? Add a drizzle of olive oil, some freshly cracked black pepper, and some fresh chopped herbs to the bowl before snapping the perfect photo.
- Prefer a creamier soup? Add some thick coconut milk after blending.
- On a reduced salt diet? Use a low-sodium vegetable broth and pick up the flavours by adding a squeeze of lemon juice or serving with some lemon wedges.
If you don't have a slow cooker, you can cook this vegan chickpea soup in an Instant Pot by cooking it at High Pressure for 10 minutes, then letting the steam release naturally for 15 minutes.

What to Serve With This Dish
While this slow cooker Moroccan chickpea soup is fantastic all on its own, it also pairs wonderfully with a variety of foods. I love serving it in individual bowls alongside some kind of bread for dipping, or a baby spinach and fire-roasted tomatoes salad for the classic hearty soups and salad combo. Really, this simple recipe can be paired with just about anything you're in the mood for.

Equipment
You will need a slow cooker to make this moroccan soup as it is. They are relatively inexpensive and a great investment, especially in the autumn / winter months as it is such a great way to prepare healthy meals for your family with little effort. A dutch oven will also work, but you will only need to have the dish in the oven at 300 degrees celsius for 30 minutes before it's ready to blend.
You could also use an Instant Pot, or even make this soup on the stove top by using a large pot and cooking the ingredients on a medium heat for about 30 minutes until the vegetables are soft. You will also need an immersion blender or food processor / blender to make the soup smooth.
FAQ's
How to Store Moroccan Chickpea Soup
This vegan chickpea soup is fantastic for making ahead of time, as it stores incredibly well. The best way to store this dish, make sure to first let it cool to room temperature. Once cooled, you can transfer your leftovers to an airtight container and store it as follows:
In the fridge for up to 4 days.
In the freezer for up to 3 months (in a freezer-safe container).
I tend to make a double batch so I have some to freeze for the next time I need a healthy meal or easy dinner but haven't got time to cook. This really helps with meal prep which is a big thing in our house!
Can I use dried chickpeas in this recipe?
You could use dried chickpeas but they would need soaking overnight before using them in this recipe.
Don't have chickpeas?
You could use white beans or cannellini beans instead.
Prefer a chunkier texture?
You could use a potato masher or a food processor on pulse to break down the big pieces of vegetables but still leave some texture to the soup.
