You can't get better than homemade wedges. They really are very easy to make and the prep is much quicker than you would think. This homemade salt and pepper wedges recipe doesn't really deserve to be called a recipe at all, it is after all so simple, so whatever your level of cooking skill, you will be able to manage these and wow your friends with your delicious homemade snacks!
These homemade salt and pepper potato wedges can be enjoyed on their own as a snack or as a side dish to accompany anything really that you might have chips on the side of. They go really well alongside a burger, served with a sandwich or as a side on a plate of snacky food. The same method can be used to turn this into a salt and pepper chips recipe too. Try these and you won't go back to oven chips again.

Ingredients
You will only need four things to make these delicious homemade wedges
- potatoes
- olive oil
- salt and pepper seasoning

How To Make Salt and Pepper Seasoning
You will need:
- 11 tablespoon salt
- ½ tablespoon caster sugar
- ½ teaspoon Chinese 5 spice
- 2 tsp crushed chilli flakes
- ½ tsp garlic powder
- ¼ teaspoon ground ginger
- ¼ teaspoon ground white pepper
Mixx all the spices together in a small bowl. Store your pepper spice mix in an airtight container in a cool and dry place.
How to make crispy salt and pepper wedges in the oven
Cut your potatoes into evenly sized wedge or chip shapes, there is no need to peel them. Pat them dry with a clean tea towel and place in a large bowl. Spray evenly with olive oil and generously sprinkle with your salt and pepper seasoning. Toss everything together so that all the wedges are evenly coated with oil and seasoning.
Place on a pre-heated oiled baking sheet in an even layer. Don't overcrowd or they won't crisp up - use two baking sheets if necessary or an extra large baking tray. If you are really serious about your wedges place them on a mesh tray designed for cooking chips.
The trick to making sure that these wedges are evenly cooked and crispy on the outside is to turn them regularly. Turn them at least 3 times during the time they are in the oven and keep an eye out at the end to make sure that the edges don't burn. I cook them on a pyrex baking tray and turn them with silicone tongs.
Cook for 45 minutes or until golden brown and crispy. Adjust the cooking time until you achieve your desired level of crispness - I like really crispy chips so cook mine a little longer. Serve your cooked chips or wedges immediately.
How to make salt and pepper chips in the air fryer
I use a Ninja Foodi on the air crisp setting but any air fryer will do the job. Prepare your wedges or chips in the same way as above, but instead use only 1 teaspoon of olive oil. Instead of putting them on a baking sheet in the oven, place them in the air fryer basket of your air fryer. Air fry for 25 minutes at 200 degrees celsius, making sure to mix the wedges around twice during cooking. If at the end of 25 minutes your wedges aren't crispy enough, add on another 5 minutes cooking time. Because you hardly need to use any oil, these wedges or chips are so much healthier than chip shops chips.

Variations and substitutions
They really are very versatile. Cut the potatoes into wedge shapes for salt and pepper wedges or cut them into thick cut chips and you have salt and pepper chips! I love the classic taste of salt and pepper seasoning on homemade chips but you can of course mix up the flavours - try using spices such as paprika, chilli flakes, black pepper, fennel seeds or garlic and herbs, don't be afraid to experiment. Chinese salt and pepper seasoning is popular in Chinese restaurants and chinese takeaways but this homemade version is much better for you. You can also garnish your chips or wedges with fresh chilli, spring onions, chopped green peppers or red pepper, guacamole or salsa for a tasty snack on their own.
You could also make these from sweet potatoes for delicious salt and pepper sweet potato wedges. You might need to reduce the cooking time slightly.
Honestly, these are so delicious and very moreish! They taste wonderful with a tomato ketchup - sometimes the simple, classic combinations are the best! They are vegetarian, vegan, dairy free, egg free, soya free and gluten free so suitable for a wide variety of diets which makes them perfect for serving to guests too. If you cook them using the air fryer this is really quite a healthy salt and pepper wedges recipe because you need barely any oil.
You could also use this seasoning mix to make your own salt and pepper potato chips (or crisps as we know them in the UK!) To do this you would thinly slice your potatoes with a mandolin and pat dry before coating in olive oil and the spice powder mix. Oven cook or air fry until crispy.

- 4 large potatoes
- 2 tbsp olive oil

Instructions
- Pre-heat the oven to 200°C / 400°F.
- Wash and chop the potatoes into wedge shapes. Try to make sure they are all of a similar size.
- Place the potato wedges in a large bowl and coat in the oil, mix really well to cover.
- Cover with salt and pepper seasoning (to taste). Mix to ensure even coverage.
- Place the wedges on a baking tray and place in the oven for 45 minutes.
- Turn the wedges every 15 minutes to ensure evenly cooked.
