I'm writing this recipe during lockdown 3.0 in Wales and comfort food is the order of the moment! I'm also juggling home schooling 3 children while trying to entertain a toddler so make ahead meals are an absolute necessity as everyone is grumpy and tetchy towards the end of the day and I love being able to bung this in the oven and I can read with the children while it is cooking and I don't have to think about cooking when I'm exhausted from the day!
Ingredients
This vegan version of shepherd's pie gets most of it's substance from the lentils, which pack a great protein punch as well as being filling. It is full of vegetables and if you can serve it with some green vegetables on the side to increase your daily vegetable dose! You can mix up the vegetables you use in this recipe, just try to keep the ratio the same or you will have to adjust the liquid content to compensate. I've used tinned green lentils in this recipe as I always have a stack of these in our store cupboard and they don't need any prep or soaking.
You will need...
- potatoes
- dairy milk
- vegan butter (I use Flora Plant Block)
- green beans
- sweetcorn
- carrots
- onion
- garlic
- olive oil
- water
- vegan gravy granules
- tomato passata
- tined green lentils
- mixed dried herbs
- salt & pepper

Instructions
- Peel and chop the potatoes and boil them in a large pot of salted water for 20 minutes or so, or until tender. Drain and mash using a potato masher with a little non dairy milk and vegan butter and season well with salt and pepper. You want the potato to be fluffy rather than creamy mashed potatoes.
- Chop the onions and mince the garlic. Heat the olive oil in a large saucepan and sauté the onion on a medium-high heat for 10 minutes until translucent.
- Add the minced garlic and cook for another minute or two.
- Add the water, passata and chopped vegetables and tinned lentils to the pan. Season with salt, pepper and dried herbs.
- Cover and cook on a medium heat for 20 minutes or so until the vegetables are tender.
- Once the vegetables are soft and cooked you can add the gravy granules to thicken the sauce and this will become the lentil filling. Bear in mind that it will thicken a bit more when it is cooked in the oven.
- Spoon the cooked mixture into an ovenproof baking dish or casserole dish and top with the mashed potato.
- Put into an oven pre-heated to 200°C and cook for 20 minutes until golden on top.
- Serve with green vegetables or one of the serving suggestions below.
Variations and Substitutions
- If you like a more tomatoey sauce you can add some tomato puree at the same time that you add the passata.
- You can also add soy sauce, vegan Worcestershire sauce or red wine to the lentil mixture to give it a depth of flavour.
- Add some nutritional yeast to the mashed potato if you would like it to taste a little cheesy.
Shepherd's Pie Make Ahead Tips
This is a great recipe to make ahead and works so well for busy families because of this. I prepare this vegan lentil shepherd's pie in the morning and leave it covered in a cool place until the late afternoon when all I have to do is pop it into the oven. I also quite often make a big batch of the filling, use half and freeze the other half to make another shepherd's pie another day. Simply defrost the mixture in the fridge overnight and assemble the next morning with mashed potato and cook as per the instructions.
This also makes a great meal to take over to someone in need. Make an extra one in a disposable metal tray (affiliate link) and they won't even need to worry about returning your dish. Perfect for giving to a family in need, friends who have just had a baby or friends with a sick family member.

- 100 g sweetcorn
- 2 medium carrots
- 1 onion
- 2 cloves garlic
- 1 Tbsp olive oil
- 100 ml water
- 2 Tbsp vegan gravy granules
- 500 g tomato passata
- 2 390g tins green lentils
- 2 Tbsp mixed dried herbs
- salt & pepper

I usually use oat milk or coconut milk in baking but you can also use almond milk or rice milk, the only thing to remember is to alter the amount that you add as they are different thicknesses which will affect the consistency of your mashed potato.
