This creamy vegan tofu curry recipe brings delightful Indian flavors right to your kitchen. With crispy pan-fried tofu simmered in a rich curry sauce, this dish is an absolute winner for any tofu fan! Whether you're craving a comforting vegan curry or exploring easy tofu curry recipes, this Indian-style dish is packed with robust spices, silky coconut milk, and tender vegetables. It's gluten-free, protein-rich, and irresistibly delicious.
Ingredients
This Indian tofu curry uses simple ingredients easily found at your local supermarket or Indian grocery store. Extra firm tofu is recommended to achieve the best texture-crispy on the outside yet tender inside. Removing excess moisture with paper towels ensures your tofu chunks cook up perfectly golden brown. Essential Indian spices like curry powder, cumin, paprika, and garam masala add depth of flavor, while canned diced tomatoes, coconut milk, and vegetable broth combine beautifully into a creamy curry sauce.

For exact quantities see the recipe card below.
Instructions
Fry the tofu for 5 minutes in a preheated frying pan with vegetable oil until golden brown, then transfer to a plate.
In the same pan, fry the onion for 5-7 minutes, stirring occasionally.
Add the spices, garlic and ginger paste to the onion and mix thoroughly so that it is evenly distributed.
Pour in the coconut milk, add the tomatoes and broth. Bring to a gentle simmer, wait for 5 minutes.
Return the tofu to the pan and cook over low heat for another 10-15 minutes, until the sauce thickens slightly. Season with salt to taste.
Remove from heat and let sit for a few minutes. Serve over rice or noodles, garnished with fresh cilantro and lime wedges if desired.
Serving Suggestions
Serve this delicious tofu curry over fluffy basmati rice or with warm, soft naan bread to soak up every drop of the flavorful sauce. For extra freshness, garnish your curry with freshly chopped coriander/cilantro and a squeeze of lime juice. Adding chopped spinach or your favorite veggie like cauliflower florets or bell peppers is also a great way to boost nutrition.

Substitutions and Variations
- If you prefer, swap coconut milk for homemade cashew cream or unsweetened plant-based milk for a lighter variation.
- For extra crispiness, prepare tofu in an air fryer instead of pan-frying.
- Spice level can easily be adjusted; add more red chili powder or Kashmiri chili powder for heat or reduce spices for milder palates.
- For a Thai twist, substitute curry powder with red curry paste.
