Flapjacks or easy oaty bars are one of my go to recipes for a healthy snack. They are nice and sweet but sturdy to transport in packed lunches. The oats pack a nice protein punch and are nice and filling so they make a perfect afternoon pick me up. This vegan raspberry flapjack recipe is only a little bit more complicated than regular flapjacks and really takes the humble flapjack up a level. Perfect if you want to impress someone with your baking!

You'll love this raspberry flapjack recipe because it is so tasty and delicious! The tart raspberries are the perfect contrast to the sweet oats and best of all these flapjacks are made from whole foods, with completely plant based ingredients so they are great for you. I love how they look with the raspberry layer in the middle - they really take the humble flapjack up a level! They make the perfect treat or even a quick breakfast. You could also serve them for dessert warmed up with a dollop of vegan double cream.

How to Make the Perfect Vegan Flapjacks at Home

These flapjacks are really quite easy to make - in fact my children made them with me! I love to get them involved in cooking and even my 2 year old really enjoys measuring ingredients out. Slightly older children can mash the banana and if you have a teenager who is sensible they can stir the olive oil  and maple syrup to melt them. 

You will need a 9x9 square cake tin. Make sure that you line it with baking paper so that the flapjack doesn't stick when you take it out. I use a loose bottom tin to make it easier to get the flapjack out but you will need to wait until it is totally cool and firmed up. 

Vegan Raspberry Flapjack Recipe

Ingredients

You will need...

  • Oats
  • Raspberries
  • Coconut oil
  • Maple Syrup 
  • Desiccated coconut
  • Ground almonds
  • Chia seeds
  • banana 

For exact quantities see the recipe card below. 

You can use fresh or frozen raspberries, we always tend to have frozen raspberries to hand in the freezer so I usually use those but if we have lots of raspberries from fruit picking we will use those.

Instructions

  1. Line a 9 x 9 baking tin with greaseproof paper.
  2. Pre-heat the oven to 180°C
  3. Put the raspberries, maple syrup and chia seeds in a saucepan and heat on a medium heat until the raspberries are defrosted / cooked through. Mash them into a pulp and leave to cool.
  4. In another large saucepan melt the coconut oil and maple syrup together on a low heat.
  5. Mix together the dry ingredients and stir into the melted mixture of oil and maple syrup.
  6. Mash the banana in a large mixing bowl and stir through the oat mixture.
  7. Scoop out about ⅔ of the flapjack mixture and press into the baking tin. Make sure to press it down firmly with the back of a spoon in an even layer.
  8. Spread the raspberry syrup over the bottom layer, carefully, making sure it spreads right to the edges.
  9. Finish with a final flapjack layer with the remaining mixture. Press down.
  10. Bake in the oven for 20 minutes or until starting to turn golden brown.
  11. Leave to cool in the tin to room temperature before removing and slicing into 18 slices.

For the flapjack mix

  • 250 g rolled oats
  • 125 g maple syrup
  • 100 g coconut oil
  • 1 small banana
  • 50 g ground almonds
  • 75 g desiccated coconut
  • pinch salt

For the raspberry layer

  • 100 g raspberries
  • 1 Tbsp maple syrup
  • 1 Tbsp chia seeds

Instructions

Nut and Seed Additions: Incorporate chopped nuts like almonds, walnuts, or pecans for added crunch and nutrition. Include seeds like chia seeds, flaxseeds, or sunflower seeds for extra texture and nutrients. Your flapjacks will transform into healthier oat bars.

Incorporate vanilla extract or almond extract for enhanced flavor.

How long will these flapjacks keep for?

Because of the fruit in these flapjacks they are best eaten as soon as possible but they will last for 2-3 days kept in an airtight container in a cool place.

Are oats gluten-free?

Oats themselves are naturally gluten-free. However, cross-contamination during processing and packaging can introduce gluten-containing grains like wheat, barley, or rye to oats. As a result, if you need to ensure that your vegan flapjacks are entirely gluten-free, it's crucial to look for certified gluten-free oats. These oats are processed and handled in a way that minimizes the risk of gluten contamination, making them safe for individuals with gluten sensitivities or celiac disease. Always check product labels and choose oats labeled as "gluten-free" to be sure you are using gluten-free oats for your vegan flapjacks.

Can I use frozen raspberries for vegan raspberry flapjacks?

Yes, you can use frozen raspberries in your vegan raspberry flapjacks. Frozen raspberries can be a convenient and delicious addition to your flapjacks, and they work well in most recipes. Here are some tips for using frozen raspberries:

Thaw and Drain: If you're using frozen raspberries, it's a good idea to thaw them first. You can do this by placing them in a strainer over a bowl to catch excess moisture. This will help prevent your flapjacks from becoming too soggy.
