Easter is coming up and chocolate cornflake cakes are always on the menu. The children love making them as they are easy to make and who doesn't love chocolate as a sweet treat?! These vegan chocolate cornflake cakes have some added ingredients which make them a little bit healthier and help them to pack a protein punch too. They aren't much more difficult to make than the regular version either.
These healthy cornflake cakes are a big hit at Easter and would make a great addition to an Easter cake sale or Easter gathering. With Easter being so full of chocolate it is nice to be able to provide a vegan cornflake cake option for your vegan guests. To make them look more festive you can add vegan mini eggs or vegan chocolate eggs to the top to decorate.
These are a great take on traditional cornflake crispy cakes for the 'big kid' inside us, it is great to have a healthier option and should go down well with younger children and older children alike. Perfect for parties too if served in individual paper cases or as an after school treat for little kids.

Ingredients
- cornflakes
- mixed seeds
- chia seeds
- flaked almonds

How To Make Chocolate Cornflake Cakes
In a heavy bottomed saucepan gently melt together the coconut oil, almond butter, vanilla extract and maple syrup until melted and mixed well. .
Crunch the cornflakes a little in a large bowl and stir in the rest of the dry ingredients. Add the melted almond butter mixture to the dry ingredients and stir gently with a wooden spoon to combine. Put the mixture in a silicone baking tray or lined square cake tin and press down gently.
Children can help by crushing the cornflakes or spooning in the ingredients.

Leave the cornflake cake in the fridge to set.
Melt the chocolate in a heatproof bowl over a saucepan of water on a low heat until it is melted. Pour the melted chocolate mixture over the top of the set crispy cake and leave to set in the fridge again before cutting into slices.
I make these in a cake tin so that they are effectively sliced into chocolate cornflake bars but you can of course spoon the mixture into individual paper cupcake cases or use a silicone muffin tin mould.
Hint: I use a silicone cake tin for making these as it eliminates the waste of using greaseproof paper and it means that the cornflake cakes are easy to remove once set.

110g cornflakes
4 Tbsp mixed seeds (sunflower / pumpkin / linseed / poppy etc)

2 Tbsp flaked almonds

Substitutions
This recipe is vegan, dairy free, egg free, soya free (be careful with the chocolate) and gluten free if you use gluten free cornflakes so it is suitable for a wide range of dietary requirements. This is a chocolate cornflake cakes recipe without golden syrup as I have tried to keep it as low in sugar as it can be, although of course if you wanted that added sweetness feel free to add a tablespoon or two of golden syrup or use it in place of the maple syrup.
You could also mix up the added extras -
- dried fruit - try including dried fruit such as raisins, chopped dried apricots or cranberries
- Different nuts - I used flaked almonds because they blend in with the cornflakes for the fussier children but you could use any chopped nuts. Chopped hazelnuts would work well.
- Peanut butter - try making these with peanut butter instead of almond butter for a peanut butter chocolate fix. Peanut butter cornflake bars always go down well with my children!
- Different cereals - you can use other breakfast cereals in place of cornflakes. Rice krispies and all bran work well.
- Double chocolate - add a tablespoon of cocoa powder to the mix to make these double chocolate cornflakes cakes.

Equipment
This chocolate cornflake recipe doesn't require much special equipment - a decent saucepan, a silicone spatula and a silicone cake tin and you are ready to go!
Storage
These cornflake cakes keep best in an airtight container at room temperature or somewhere cool. They can be kept in the fridge if it is warm where you are. They will keep for 2-3 days but are best eaten straight away for the best crunchy texture.
These ingredients don't stand up well to freezing.
