So, at the moment the children are all at home and asking for snacks every 5 minutes! I really love making healthy and filling food for them so I've been in the kitchen baking healthy but tasty snacks which will keep them going all day! These healthy date and apple flapjacks are refined sugar free and full of filling goodness from the oats so they are the perfect between meal snack to keep your little people going without giving them a sugar rush. They taste yummy too - like apple crumble!
Serve as they are or with some apple pieces or apple slices, or serve warm with a scoop of vegan ice cream as a dessert.

Ingredients
- oats
- medjool dates
- dessicated coconut
- mixed seeds
- apple (grated)
- maple syrup
- dairy free spread

The goal with these flapjacks was to make them filling and sweet enough to appeal to small people, but without that refined sugar high. Oats are a super food in my opinion and I try to get a portion in every day, be it through adding them to pancakes, cakes, eating them for breakfast in porridge or having a oat flapjack treat.
Oats are a great source of fibre, especially beta glucan, and are high in vitamins, minerals, and antioxidants. Whole oats are also the only food source of avenanthramides, a unique group of antioxidants believed to protect against heart disease. You can take a look at Healthline for the full nutritional information. They are also gluten free (just check the packaging of the brand you purchase).
These date and apple flapjacks are sweetened by dates and apple. I keep the skin on the apples when I grate them as that adds extra fibre and this makes them a high fibre choice that is relatively low on the GI index considering the sweetness that they contribute. Because they are grated you won't get large chunks of apple ruining the texture of the flapjack. The dates contribute a caramel style sweetness and are full of fibre and other vitamins and nutrients without the need for golden syrup and brown sugar or caster sugar.

Instructions
Pre-heat the oven to a medium heat of 200 °C (fan)
Prepare a 9 by 9 square baking tin with parchment paper or use a silicone baking tray.
Put the dates, grated apple, oats, seeds and desiccated coconut into a blender and pulse until combined.
Melt the dairy free spread and maple syrup in a saucepan over a medium-low heat, stirring throughout with a wooden spoon.
Add the date and oat mixture from the blender and stir into the melted butter.
Spread the flapjack mixture into the prepared tin and press down firmly using the back of a spoon.
Place in the oven and cook for 20 minutes or until starting to turn golden brown.
Leave to cool in the tin before cutting into 9 pieces using a sharp knife.

An apple flapjack is great thing for school lunches and are a great way of getting extra fruits into fussy children.
Variations and Substitutions
You could use another dried fruit in place of the such as apricot or raisins.
You could also try using pear instead of apple, although the consistency might be a little wetter.

How long do these apple flapjacks keep for?
These flapjacks will keep for 3-4 days if sealed in an airtight container in a cool place. You can freeze them for up to a month, stored in a container and separated with sheets of baking paper or wrapped in cling film. Defrost at room temperature until thawed through. I prefer an apple flapjack fresh out of the oven though!
Which dates are the best to use?
I try to use medjool dates in any recipes that I use. They are significantly bigger and juicier, and are so nice to eat raw as well as cook with. If you do use another variety of date you might find that they are a little drier and you might want to soak them in a little water for a few minutes before using them to make sure that they plump and soften up.
Which apples are best for apple flapjacks?
You can use any eating apple, although for these I would opt for a sweet apple rather than a tart one. Don't use cooking apples as I would worry that they won't cook enough.
Can I use apple sauce instead of grated apple?
I would have thought so, although the mixture will be wetter so you might want to add more oats until it is the right consistency.
