Flapjacks are my absolute favourite and they are something I thought I would miss when I adopted a vegan diet. However I have been pleasantly surprised that these are just as tasty made without real butter - in fact I don't think that you could really tell that they are vegan!
These fruity vegan flapjacks are soft and chewy and full of goodness from the seeds and dried fruit and bananas so you don't need to feel so guilty that these are bad for you - there is a bit of goodness in there too!
I tend to eat a fair few flapjacks when I am breastfeeding as oats are supposed to be good for milk production. So I find that a bowl of porridge for breakfast and one of these for a snack during the day and I would have a great milk supply. It's this reason why I always make a batch of these for friends who have just had a new baby too. They are really portable so I love popping a few in a tupperware box to give to friends or even to take out and about with me, and then I have a healthy, sustaining snack on me for the day.

Ingredients
- soft brown sugar
- non dairy butter
- golden syrup
- rolled oats
- dried cranberries
- dried apricots (chopped)
- sunflower seeds
- bananas

Instructions
- Prepare a square tin - ideally one with a loose bottom by lining it with parchment paper (or use a silicone cake pan)
- Preheat the oven to 160 degrees Celsius (gas mark 3)
- Heat the non dairy butter, sugar and golden syrup in a large pan over a low heat until it is all melted
- Take off the heat and add the rest of the dry ingredients to this syrup mixture, stir until combined
- Add the mashed banana to the oat mixture and completely mix in
- Spread the mixture into the prepared tin and press down and smooth over with the back of a spoon.
- Bake in the preheated oven preheated to 160 degrees Calsius for 20 minutes or until golden brown, but make sure that they don't burn at the edges.
- Leave the oaty flapjacks cool in the baking tin set on a wire rack, then cut into squares before they are completely cold.

- 4 tbsp golden syrup
- 350 g rolled oats
- 50 g dried cranberries
- 50 g dried apricots (chopped)
- 50 g sunflower seeds
- 2 bananas (mashed)

- Take off the heat and add the rest of the dry ingredients, stir until combined

Honestly, these oat bars are so easy to whip up and make which is good as they don't last long! It's definitely a really easy flapjack recipe - even my older two children can make it!
Variations and Substitutions
You can mix up the seeds that you use - try pumpkin seeds, sesame seeds, linseeds or a mix of seeds.
You could also add nuts to make nut flapjacks or change the dried fruit - try raisins, goja berries or dried strawberries for a different flavour of fruity goodness.
You can swap the golden syrup for maple syrup but your flapjacks won't have the same gooey texture and may struggle to keep together.
