This fun and eye-catching treat-originally a popular street snack in northern China-features juicy strawberries coated in a sweet, glass-like sugar shell. It's simple to make at home and uses only a handful of ingredients. Best of all, it's naturally vegan-friendly (just be sure to choose a vegan-certified sugar). Ingredients

For this strawberry tanghulu, you'll only need a handful of simple ingredients: fresh strawberries, water, wooden skewers, and vegan-certified sugar (standard white sugar can sometimes be processed using animal byproducts, so be sure to check the label). The recipe centers around creating a sweet, crunchy shell rather than delivering significant nutrition, so consider it an occasional indulgence or fun treat rather than a health-focused dish.

Instructions

Prep the strawberries

Thread 2-3 strawberries onto each wooden skewer.

Gently wash and pat dry the strawberries, leaving their green tops (stems) intact if desired.

Cook the sugar syrup

Once it hits 300°F, remove the pan from the heat and let the sugar syrup cool for a few seconds.

In a small saucepan, combine the sugar and water.

Cook over medium heat, stirring occasionally to help the sugar dissolve.

Use a candy thermometer and heat until the syrup reaches 300°F (150°C)-the hard crack stage.

Prepare an ice bath

Fill a bowl with cold water and a handful of ice cubes. This will rapidly cool the candied strawberries and set the sugar coating.

Coat the strawberries

Working carefully (the sugar syrup is extremely hot), dip each skewer of strawberries into the hot sugar syrup, turning to coat evenly.

Let any excess sugar drip off the fruit skewers before moving on.

Set the coating

Immediately plunge the candied strawberries into the ice water bath to harden the sugar shell.

Remove them from the ice water and gently pat dry with a clean cloth or paper towel and place on parchment paper.
