Press and drain the tofu using a tofu press.
Make a brine by adding all the ingredients (except tofu) to a large pan and bringing to the boil. Boil for 10 minutes.
Slice the tofu into ¼ inch slices. Place into the boiling brine and simmer for 5 minutes. Turn off the heat, cover and let sit for 30 minutes, or in the fridge overnight.
Pre-heat your oven to 190 degrees celsius. Oil a baking tray and bake the tofu on the oiled sheet for 1 hour and 30 minutes. Adjust the cooking time accordingly for softer or more crisp vegan corned beef.
