WHAT IS #COOKBLOGSHARE?
CookBlogShare is a community for food bloggers to share recipes and foodie posts and generally support the food blogging community. The community is centred around the #CookBlogShare linky. I'm relatively new to the food blogging community, but I have been so amazed at how welcoming it is, and how other bloggers support each other to help each other be the best that they can be. I'm delighted to join in this week as host for the first time with my vegan recipe roundup.
The CookBlogShare linky is a wonderful way for a wide range of food writers, recipe creators and bloggers to come together and share each other's recipes. I have found so many delicious recipes from checking out this linky, I look forward to reading it every week.
The linky is now hosted regularly by Sisley from Sew White & Chloe from Feast Glorious Feast. New members are always welcome to join so make sure you invite your other food blogger friends!
The last linky was hosted by Sisley from Sew White who put together a collection of recipes using autumn fruit. It was such a great round-up and as I am fully embracing autumn at the moment it gave me lots of inspiration for warming seasonal recipes to make for my family as the weather starts to cool down.
Each week the host chooses a selection of recipes which have been submitted during the previous week to showcase. This week I have chosen to feature the vegan recipes. I didn't know how many vegan recipes would link up last week and I was so encouraged to see several linked up. I find it really heartening to see how vegan recipes are becoming more mainstream and that even people on a non-vegan diet are cooking more vegan food.
VEGAN RECIPE ROUNDUP

Vegan Sweet Potato Soup with Coconut
This silky vegan Sweet Potato Soup with Coconut milk is comforting and nutritious. Easy to prepare, it's finished with a dash of rice wine vinegar for a subtle hint of sweet and sour.
Courgette Corn Soup With Vegan Pesto - Tin and Thyme
Lightly spiced, but rich in flavour, this courgette corn soup is smooth & unctuous. Even more so combined with kernels of roasted sweetcorn.

Instant Pot Nasturtium Grapefruit Marmalade

No-Bake Coffee Energy Bites is an easy 5-minute protein-rich no-cook, no-bake Vegan, GF, dairy-free, processed sugar-free recipe made using nuts and seeds.

Fresh Fig Chutney with Orange
Fresh Fig Chutney is dark, sweet, savoury & fruity in all the right ways. With a hint of orange but not spiced, this recipe is a one pan wonder perfect for first timers & experienced preservers alike.
I just know that the chutney would make a fabulous homemade Christmas gift and I'm literally going to make those energy balls this morning to get me through the afternoon slump! The struggle is real at the moment!
