Until a few years ago I hadn't heard of blondies. If you haven't had the joy of a blondie yet they are a mixture between a flapjack and a brownie. Think sticky, slightly chewy deliciousness. They aren't as gooey as brownies and not as chewy as flapjacks. A glorious hybrid if you like. These chocolate chip vegan blondies are really easy to make and you'll love them so much you'll want to bake them again and again!
These eggless blondies don't last long in our house, in fact, four out of the sixteen were gone before they had fully cooled and I had to prise one out of my daughter's hand so I could take some photos before they were all gone! They are the perfect afternoon pick me up and I often put on into the children's lunchboxes as a special treat, they are nut free so the perfect treat for school lunches.
This morning I took my eldest son on a long walk and packed a tub with some of these in my backpack for our halfway pit stop. The thought of having this treat waiting for him at the halfway point certainly kept him going and we actually managed a 5.5 kilometre walk which is not bad going for a 6 year old!

Ingredients
- porridge oats
- plain flour (all purpose flour)
- bicarbonate soda
- non dairy butter
- soft brown sugar
- vegan condensed milk
- ground flaxseeds
- vegan chocolate chips

Oats - I just use basic porridge oats. You don't want to use steel cut or jumbo oats as they will be too course. The oats provide protein and give these blondies a great structure.
Flour - I always use the most expensive flour that I can afford, I really think it makes a difference.
Vegan condensed milk - this is a new discovery for me. It isn't quite the same as regular condensed milk but it works just as well in baking. I've used it to make the caramel for millionaire shortbread and it turned out so well! I used the Carnation brand for this recipe.
Soft brown sugar - the soft brown sugar gives this a soft, sweet chewy texture so don't be tempted to swap this for a difference type of sugar.
Chocolate chips - I use dark chocolate chips from Aldi, they are a great price and really good in baking. Any vegan chocolate chips would do, or even chocolate cut into small chunks, and I am sure that using vegan white chocolate chips in these would be amazing!

Instructions
- Preheat the oven to 180 °c
- Line a 9 inch square baking pan with greaseproof paper
- Mix the ground flaxseeds together with the water in a small bowl and set to one side for five minutes. This creates the flax egg.
- Mix the oats, flour and bicarbonate of soda together in a large bowl
- In a separate bowl beat together the dairy free butter and the sugar until soft and fluffy.
- Mix in the condensed milk, followed by the flaxseed mixture
- Add the dry ingredients to the wet ingredients in the large mixing bowl and mix to combine.
- Stir through the chocolate chips.
- Spread the mixture into the prepared baking pan and put in the oven for 30-35 minutes until golden brown.
- Once cooked leave to cool in the tin on a wire rack before cutting into 16 squares.

Substitutions
I wouldn't recommend many changes to this recipe. I think gluten-free flour would work, although I haven't tried it myself. You could change the dark chocolate chips for vegan white chocolate, I think that would taste delicious! If you want to make double chocolate vegan blondies replace 50g of the flour with 50g of cocoa powder. You could also swirl peanut butter through the blondies before baking to make vegan peanut butter blondies.
