As working parents to four children we often find ourselves short on time as you can imagine. We have also learnt to be very organised, with a calendar for activities, a rough daily routine and a weekly meal plan. Every Sunday I sit down and write a vegan family meal plan and shopping list based on that plan. I often ask for input from the rest of the family as I know that if there are meals that they choose on the menu they are more likely to eat them.

Making a vegan shopping list and weekly shop
I use the shopping list that I write to do an online food shop that I can pick up using a click and collect or delivery service from our local supermarket. We also have a local zero waste shop that I use as well as a greengrocer for fresh vegetables and fruit twice a week. Over lockdown these two began offering delivery services which is great as I can put my orders in at the same time as doing my online shop. I make sure to look through my cupboards and freezer when I am writing my meal plan as we might have some frozen meals or store cupboard ingredients that need using up.

Why meal plan?
I meal plan because I find it best to be organised and know what we are eating each day. It helps me to make sure that we have a balanced and varied diet and I don't need to worry each day about thinking what we will eat and looking for recipes. As we are vegetarian diet / vegan diet and don't include animal products as a food source, such as dairy products or eggs, we do have to make sure that we are meeting the appropriate nutritional targets. You might also want to follow medical advice yourself if you have a medical condition to manage and you need to get enough key nutrients, healthy fats and are eating a variety of food. For example, some vitamins are very difficult to get from a vegan diet - a good example is vitamin B12 so you will want to ensure you are making allowances and accommodations for that.
I like to have all the ingredients for what I am cooking to hand so I don't need to spend time hitting the shops each day which is why I like to make a weekly meal plan. I also like to plan easy to cook or prepare meals for busy days or days that we are going to need to eat quickly because of after school clubs. I know that some people don't like the inflexibility of a meal plan but I don't see it like that. I will swap meals around as necessary, if I don't fancy that meal on the set day. Meal planning is also great if you are on a budget as you can plan cheaper meals, work leftovers into your plan and doing your shop online means that you won't be tempted by random things in the supermarket that you don't need.

This takes all the effort out of your meal planning - just download the vegan meal planner, print or write it out or keep it on your phone and create your own grocery list. If you don't like something on the meal plan feel free to change it to suit your family. I will also include links to recipes that you might need so you don't need to go recipe hunting. Also, if there are any vegan recipes that are favourites of yours let me know and I will endeavour to include them on a future meal plan! The meal plans are suitable for families of any size - just adjust the recipe quantities to suit. This way this meal plan will work as a vegan meal plan for a family of 4, 6, 8 or more. I will highlight in the email meals that can be made in bulk so you can save portions for later in the week or freeze for another day.
I am not a fan of calorie counting for weight loss, preferring to eat well proportioned, plant based, whole grains and whole foods and keeping up with exercise. However, if you are on a vegan diet, most recipes will come with nutritional and calorie information, just take a look at the recipe card.
Good news! All recipes will be easy to follow and easy to prepare. This is a family friendly meal plan, geared towards busy families where easy recipes are a must.
