We are still homeschooling here and still trying to increase our fruit and vegetable intake, as well as partake in daily exercise, yoga and mindfulness. It seems like we have a lot to fit into the day and so this week I have tried to create a vegan family meal plan that incorporates meals that are slightly easier to make. I haven't planned snacks or lunches into the meal plan this week on the most part as I am trying to be a bit more flexible as the children prefer that approach.

Monday
Vegan Quorn burgers with roasted rosemary potatoes and roasted vegetables.
I usually roast potatoes, carrots, sweet potato, peppers, courgette and onions in one dish for ease. I will serve this with Quorn burgers and this makes this a really easy dinner. You can even pre-chop the vegetables a few hours before you need to roast them.
Tuesday
Homemade Pizza and salad.
I make pizza bases using a Jamie Oliver recipe and make my own pizza sauce. This week I'm hoping to make double the amount of pizza sauce so that I can freeze it for next time. I usually use Koko cheese and have sweetcorn and pineapple as toppings but vegan pesto is also a favourite of mine on pizza. You can of course add any toppings that you like!
Wednesday
Quorn Burgers & homemade chips and baked beans
Again, another easy dinner. I'm planning Quorn burgers in rolls with homemade chips and baked beans on the side.
Thursday
I make a wonderful ragu in the slow cooker, and serve it with vegan meatballs and spaghetti pasta. I love slow cooker meals as I can prepare them earlier in the day and when I have a moment and dinner is ready in the evening without much effort.
Friday
Vegan sausages and chips
Every Friday we have a takeaway - usually chips from the local chip shop. We pair this with vegan hot dogs - vegan sausages in finger rolls. Other takeaway favourites are sweet and sour tofu with boiled rice and rice noodles from our local chinese.
Saturday
Lunch - Roasted red pepper and tomato soup.
This soup is everyone's favourite in our house and I am always getting asked if I'm making it this week. I've struggled to order romano peppers in our food shop though so will have to use bell peppers so I hope that the flavour isn't too badly affected. Has anyone else found that some fresh food items have been difficult to pick up lately? I'm not sure if it is due to Brexit or to the pandemic.
Dinner - Tacos. We use soft taco kits and make a quinoa taco mix for the filling. I am going to try to write down the recipe for the blog this week.
Sunday
Lunch - Sunday lunch
A Sunday lunch has become one of our lockdown stapes. I usually have a vegan sausage roll or pasty as the 'meat' on my dinner, but I equally like just vegetables if I'm honest.
Dinner - crackers, crisps and hummus.
We are normally so full after our Sunday dinner that we are happy to have a snacky dinner and that works well with having a lazy Sunday afternoon.
