Wash and hull strawberries and stir through the lemon juice.
Place strawberries, coconut milk, sugar and vanilla in a blender or food processor and puree until smooth and creamy, about 2 minutes.

Pour the ice cream mixture into a loaf pan and top with some chopped strawberries
Freeze for at least 5 hours (for soft set) 6+ hours for a hard set.
If frozen over night let sit at room temperature before trying to scoop out.
