I LOVE a chocolate croissant and I have been really missing them on a Sunday morning with a coffee and a newspaper! So last Sunday I looked I was thinking about something to make with a roll of puff pastry that I had in the fridge and this easy vegan chocolate croissants recipe came into being! You can make vegan croissants from scratch but making vegan croissant dough can be difficult and it's something I just don't have the time for at the moment
Use ready made puff pastry
Most ready made puff pastry you can buy in the supermarket is vegan but do make sure that you check the ingredients just in case. I used ASDA brand this time but I know that a popular pastry brand is accidentally vegan too. For this recipe you will only need a bar of vegan chocolate and a sheet of ready rolled puff pastry, it really couldn't be simpler than that. If you can't find ready rolled puff pastry you can use a vegan puff pastry block, you will just need to use a rolling pin to flatten it out to about a 5mm thickness before cutting into shape.
If you do want to make your own pastry I have seen a vegan recipe for it on Delicious Everyday which has good reviews. Let me know if you try it.
I do cook these on a silicone baking mat placed on a metal baking tray to stop them sticking. Once they are cooked they are delicious and flaky and are best eaten warm whilst the chocolate is still melted. Absolutely delicious!

How to make easy vegan chocolate croissants
You will need to take the pastry out of the fridge about 5 minutes before you need to use it so it becomes pliable, while you are waiting you could pre-heat the oven and break the chocolate into pieces.
Then what you will need to do is cut the pastry sheet into 6 rectangles for bigger croissants or 12 rectangles for mini croissants. Divide the chocolate between the rectangles and seal to close. Make sure to press down the seals.
Top tip: A pizza cutter makes easy work of slicing through the pastry.

Place the rolled croissant seal down onto the lined baking sheet and brush the top of the dough with water or plant-based milk which will help them flake nicely and go golden brown. Bake in a pre-heated oven at 200 degrees celsius for about 20 minutes, until they are puffed up and brown. If you make the smaller croissants they might need slightly less time so make sure that you keep an eye on them. Make sure that they don't go into a cold oven.
Leave them to cool on a wire rack but do try to eat them warm!
Now it is absolutely essential that you sit down with a book or a magazine and a hot cup of soy milk coffee and spend at least 5 minutes enjoying these vegan pain au chocolat!

- 1 sheet vegan puff pastry
- 90 g vegan chocolate
Instructions
- Pre-heat the oven to 200 degrees celsius.
- Take the puff pastry out of the fridge for 5-10 minutes
- Line a baking tray with a silicone liner or baking paper
- Cut the pastry into 6 or 12 rectangles depending on how big you want your croissants to be.
- Divide the chocolate between the pastry rectangles
- Seal the croissants Seal the rectangles and press down on the edges
- Place them on the tray, seal down and brush with water.
- Cook for 20 minutes or so or until golden brown and puffed up.
- Leave to cool on a wire rack

Variations and substitutions
You can of course make your own vegan puff pastry instead of using shop bought but it is difficult and time consuming so I wouldn't necessarily recommend it. You would need
You could also make different shaped croissants. For crescent shape croissants you can follow this tutorial which should help you to shape them well into crescent rolls.
If vegan chocolate croissants aren't your thing you can always just use the puff pastry to make plain croissants, just leave out the chocolate and shape the dough as above. These will taste like beautiful buttery vegan croissants and you can enjoy them as they are or with jam or marmalade and some extra plant-based butter - I like Flora Plant butter block which is a really tasty non dairy butter.
You can also make savoury croissants the same way. Try adding grated vegan cheese to make cheese croissants or add some vegan ham style slices or bacon too, diced.
