I absolutely love fluffy American style pancakes so when I adopted a vegan plant based diet a pancake recipe with no butter or eggs was the one recipe that I had to perfect. I wanted them to taste just like regular pancakes and they really do - this is genuinely the best pancake recipe without butter and using basic ingredients that I have found.
As a family we eat homemade pancakes most weekends. There is something about gathering together on a slow morning and enjoying a meal together, reading the weekend papers, watching cookery programmes on TV and just enjoying the moment. These no butter pancakes are a healthy choice and we like to serve them with fresh fruit and maple or blueberry syrup. As an extra treat we sometimes serve them with vegan chocolate spread.
Ingredients
- plain flour (all purpose flour)
- coconut sugar
- baking powder
- salt
- vanilla extract
- coconut oil (melted)
- non-dairy milk

This easy recipe uses ingredients you are likely to already have in your cupboards. I use a mixture of oat and coconut milk but you can use any non dairy milk such as almond milk or soy milk. Just bear in mind that the consistency might change according to which milk you use. You want the mixture to be thick enough to hold a pancake shape when dolloped into a hot pan. You can replace the coconut sugar with caster sugar if you like.
I would also recommend using a quality vanilla extract as it will really make a difference to the flavour. I have made these with whole wheat flour instead of white flour but it does make them more dense and less fluffy, although they are more nutritious this way. Definitely use white flour for the fluffiest pancakes.

Step-by-step Instructions
Mix together the dry ingredients in a large bowl, making sure to use a sieve so that there are no lumps and the flour is aerated.
Whisk together the wet ingredients in a separate bowl, making sure that the milk isn't too cold so that the coconut oil remains liquid.
Add the wet ingredients to the large mixing bowl and whisk until smooth. You can let the batter rest for a few minutes while you prepare set the table and prepare fruit etc.
Grease a frying pan or pancake pan with coconut and heat to a medium high heat.
Spoon the pancake batter into the pan and cook until small bubbles form on top of the pancakes.
Flip the pancakes and cook on the other side for a minute or so until golden brown on both sides.
Serve with fruit, melted vegan chocolate, maple syrup or other topping of your choice.

Variations and substitutions for pancake recipe (no butter)
Don't be tempted to mess with this easy pancake recipe too much or it won't work. There are recipes that call for flax egg, baking soda and vegan buttermilk using lemon juice or apple cider vinegar but this eggless pancakes recipe honestly doesn't need anything like that. You can however replace some of the flour with cocoa powder for chocolate pancakes or add a handful of blueberries for blueberry pancakes. If you like chocolate chip pancakes add some vegan dark chocolate chips to the batter at the end, but you will want to cook these at a slightly lower temperature so that the chocolate doesn't burn.

How to serve plant based pancakes
You can serve these fluffy vegan pancakes so many ways - I love them with strawberries, bananas and pure maple syrup but you can also have them with vegan chocolate spread, vegan chocolate chips, almond butter, peanut butter, Biscoff spread, blueberry syrup, jam, fresh berries etc - the options are endless! They honestly are the best vegan pancakes and make for a really delicious breakfast.
Can you freeze these dairy free pancakes?
Although these pancakes are best when they are freshly made, I always make a big batch of these pancakes so that I can freeze the spares. Freeze by placing sheets of greaseproof paper between each pancake so that they don't stick together. Use within 3 months, defrost at room temperature before warming up in the oven or microwave.
I love having a little stash in the freezer to defrost for a little snack or even to make a stacked pancake dessert with vegan ice cream.
How long with these no-butter pancakes keep for?
They will keep for 3-4 days in an airtight container in the fridge. Re-heat in the microwave or by popping them in the toaster on a low setting.
Which non-dairy milk should I use?
I use a mixture of oat milk and coconut milk. It is generally thought that soya milk is the best for baking but really any dairy-free milk will do - just bear in mind that some milks are thicker than others so you might need to add a little more or less than the recipe calls for.
Are vegan pancakes healthy pancakes?
Yes, and no. They contain sugar which we should be mindful of having to excess. Generally this vegan pancake recipe is on par with regular pancakes in terms of healthiness.
