Funny story (or not!) - we are in the middle of a pandemic and I'm home schooling four children and trying to build this blog. I'm trialling recipes whilst helping a reluctant 6 year old with his maths work and it doesn't always go well. I was playing around with creating granola bars for snacks for the week but I didn't get the recipe quite right first time and the bars fell apart. Nibbling on the resulting granola clusters I realised that although my recipe intention had been a fail, the chocolate granola I had made was absolutely delicious! So rather than waste my efforts I have written this almond chocolate granola recipe up so that you can benefit from my mistakes too! 

This is one of my healthier granola recipes as it contains no oils such as coconut oil or olive oil or sugars like brown sugar or even coconut sugar. 

Dark chocolate granola

Ingredients

You will need...

  • oats (rolled oats rather than quick oats)
  • almonds
  • mixed seeds
  • pure maple syrup
  • almond butter
  • vegan dark chocolate

This is a great dark chocolate granola recipe with simple ingredients and it is easily adapted by adding extras. I wanted this to pack a protein punch. Food like this are an easy, tasty way to get proteins and nutrients into my children as they are real chocolate lovers and. this tastes like a treat! It is definitely better than commercial chocolate cereal first thing in the morning. 

I used almonds and almond butter, because I love the flavour and I think it goes so well with chocolate but also because they a great source of fibre and protein, and contain important nutrients including vitamin E, selenium, zinc, calcium, magnesium and B vitamins, especially folate and biotin (vitamin B7). The maple syrup adds some sweetness and helps the granola to clump together and the chocolate adds a delicious flavour. I used dark chocolate chips because they melt into the mixture so easily because of the warm maple syrup and almond butter but you could also melt chocolate in a bain marie and add it directly or chop up a chocolate bar finely. I also added a handful of seeds for some texture and goodness. I have a jar of mixed seeds in my kitchen cupboard so there's usually a mixture of pumpkin seeds, sesame seeds, sunflower seeds, linseed etc.

Instructions

  1. Pre-heat the oven to 180 °Celsius (fan).
  2. Chop the almonds into chunks (according to whichever texture you prefer).
  3. Place the almonds with the oats on a large baking sheet in an even layer and roast in the oven for 5 minutes. Stir and place back in the oven for another 5 minutes. Take care that they don't burn.
  4. Warm the maple syrup and almond butter together in a saucepan until combined.
  5. Take off the heat and add the dry ingredients - chocolate, oats and almonds. Stir quickly to make sure that the chocolate melts.
  6. Push the mixture down onto a baking tray, pressing it down firmly. You can line the tray with parchment paper if you like.
  7. Leave to cool for a couple of hours in the fridge.
  8. Take it out and crumble it into granola size chunks in a large bowl, depending upon how chunky you like your granola.
  9. Serve at room temperature.

Description

This healthy crunchy dark chocolate granola recipe with almonds is so delicious that it feels like a real treat to have it for breakfast in the morning. It tastes great with vegan oat yoghurt and a drizzle of maple syrup.


Ingredients

  • 135 g oats
  • 80 g almonds
  • 50 g mixed seeds
  • 100 ml maple syrup
  • 100 g almond butter
  • 80 g vegan dark chocolate

Variations and Substitutions

This is a really delicious granola as it is, with a lovely subtle chocolatey flavour. You can make some modifications to suit your own taste though. 

Try swapping out the almond butter for peanut butter if you prefer a chocolate and peanut flavour granola. 

You can of course change up which nuts you use too, this granola is a great opportunity to experiment with different flavours.

If you want a more chocolatey granola add a tablespoon of cocoa powder or cacao powder to the maple syrup and almond butter mixture. 

I use a variety of mixed seeds but you can just use whatever you have in your cupboard. Try adding cacao nibs or coconut flakes too. If you want to add dark chocolate chips or dark chocolate chunks make sure that the mixture is cool enough for them to stay solid.

My go to chocolate for cooking with is Bourneville dark chocolate but I also love Green and Black's dark chocolate bar too.

FAQs

How long will this dark chocolate granola keep for?

This granola mixture will keep for about a week in an airtight container - perfect homemade granola recipe for an easy healthy breakfast in the morning.

How do I serve this almond and chocolate granola?

We serve it with milk (who doesn't love to make the milk go chocolatey!) or yoghurt and eat it for breakfast, snacks and dessert. It doesn't need any extra sweetener as it is in my opinion the perfect sweetness, but you could of course serve it with a topping of fresh fruit for added goodness, I'd recommend trying strawberries, raspberries or banana. If you have a really sweet tooth a dash of maple syrup or delicious dark chocolate shavings made a great topping too. You can also sprinkle some hemp hearts, hemp seeds or chia seeds as extra toppings. Try it with vegan vanilla ice cream for an amazing dessert!

How do I store dark chocolate granola?

We store granola in an airtight jar which lives on the kitchen counter. I think granola is so pretty it should be on display, and you won't forget to eat it when you are looking at it all the time!
