When I first started eating a plant-based diet, it was the 'substitutes' that I struggled with the most. So many shop bought dairy free yogurts are full of artificial ingredients and have an artificial flavour to match. This homemade yogurt is made from tofu and fresh fruit so is naturally high in protein, and the protein powder gives it an extra protein punch. I love this yogurt with my granola for breakfast, and as a sweet treat with some fresh strawberries and bananas for dessert.
You don't need any special equipment, yogurt-making supplies or yogurt maker for this recipe - just a high speed blender. It really is just as straightforward as blending all the ingredients together in a food processor or blender until smooth - no need to worry about the yogurt setting or yogurt cultures working, just blend and enjoy straight away.
Ingredients
The ingredients in this high protein vegan yogurt are wholesome and good for you. Choose a vegan protein powder that is made from natural ingredients. I have used banana and strawberry in this yogurt but you can switch these out for other fruits if you prefer. Don't be tempted to skip the cashew butter - this really adds to the creamy texture of the yogurt.
These simple ingredients should be readily available in larger grocery stores - although I did have to do a bit of hunting to find silken tofu. The type of tofu makes a difference to this recipe. Soft or silken tofu is necessary for the texture, and there's no need to press excess liquid out like you might be used to doing with firm tofu.

Add all the ingredients to a high speed blender.
Blend on high until smooth. Serve immediately.
Notes
The banana in this recipe means that the plant-based yogurt will discolour slowly with time so it is best eaten straight away rather than kept in the fridge. If you store it in the fridge for a day or two in an airtight container such as mason jars, it will still taste great, but it will have a grey-ish colour.

Yes, although I find tofu has a grainy texture if frozen and defrosted. Freeze it in ice cube trays or a freezer-safe container. Blend again when thawed for a smooth texture. Remember again the banana will discolour so the yogurt will lose it's pink colour.
What can I substitute for cashew butter?
Use sunflower seed butter, almond butter, peanut butter, or tahini as suitable alternatives, although this will change the flavour profile.
Do I have to use frozen fruit?
Frozen fruit gives the best creamy texture, but fresh fruit works too-add ice cubes if needed for thickness.
How do I make the yogurt thicker?
Use less liquid, more frozen banana or avocado, or chill the yogurt briefly before serving if you want the texture thicker, like vegan greek yogurt
Can I make this without protein powder?
Yes, the yogurt will be slightly lower in protein. Consider adding chia seeds or hemp heartsinstead.
