I love a refreshing sorbet on a hot summer's day, and because sorbet recipes are made of mostly fruit they are healthy right?! Well, if you forget about the sugar content! This vegan raspberry sorbet recipe is so easy to whip up in the evening and you don't need an ice cream maker, in fact I really love pottering about and stirring it every hour or two. It's a beautifully simple dessert to make, and a healthy dessert day too! Perfect while we are entertaining and a delight to enjoy on any occasion even after moving houses.
This delicious vegan raspberry sorbet is the most gorgeous dark pink colour you have ever seen and is just perfect on it's own, it needs no accompaniment, just enjoy it as it is from a bowl. I do have an idea to make a raspberry and elderflower version though so watch this space! We have tried a few shop bought raspberry sorbets and this is by far our favourite, the flavour is fresh and natural and not sickly sweet like others can be.
My youngest will not eat any fruit so we have to be creative in ways in which we can get him to eat a rainbow. One of our go to's at the moment is smoothie ice lollies - we make a smoothie and then freeze it in ice lolly moulds - he loves them. He also loves this sorbet, and while it does contain sugar, I'm happy that he's getting some fruit into his diet.

Every summer we go raspberry picking and as there is so many of us we usually pick far more raspberries than we can eat so I either make raspberry jam or this raspberry sorbet. If you haven't got fresh raspberries you can also make this using frozen ones, just defrost them in the fridge beforehand, the sorbet will work out just the same, and often frozen raspberries are cheaper than buying fresh fruit, without losing any goodness or taste.

Instructions
It's really quite simple to make this recipe.
Boil the sugar and water together for 3 minutes until the sugar is dissolved and a light syrup is made. Leave to cool.
Blend the raspberries in a blender.
Push the raspberry mush through a sieve to remove the raspberry seeds. This will take some work, keep pushing!
Pour the cooled sugar syrup through the sieve to push through any remaining raspberry juice.
Add the juice of half a lemon and stir to combine. Put the mixture into a freezable container and freeze for two hours.
After two hours stir the sorbet mixture to break up the ice crystals.
Stir again after another hour and a couple of times an hour after that for another couple of hours and then leave overnight.
When it is time to serve, use an ice cream scoop warmed in hot water to scoop the sorbet out so it comes out easier
